These cookies require a little blending, a little rolling and a little oven time and are guaranteed to hit the sweet spot.
They take only 10 minutes to bake, so put them on while you make your cuppa, round up the troops and enjoy!

Ingredients
- 1 cup of seeds (pepitas, chia and sunflowers work well)
- 1 cup organic medjool dates (pitted)
- 1⁄2 cup coconut, finely desiccated
- 1 tbsp raw cacao powder
- 1 tsp vanilla extract
Method
Place all ingredients in a small food processor / blender and blend away until well combined.
Scoop out 1 heaped tsp of mixture and roll into a ball. Place on baking paper and flatten slightly with the back of a fork. The cookies won’t rise or expand at all during the cooking process, so no need to leave much space between the cookies on the tray.
Bake in a moderate oven (180 degrees C) for 10 minutes.
At the end of their oven time they will look pretty much the same as they did when you put them in, but they will harden up around the edges as they cool down, yet remain deliciously moist in the centre. After 5 minutes of cooling time on the baking tray, place them on a wire rack to cool completely.
The end product will be a bite-sized cookie with a soft, chewy centre and hard outer shell jam-packed with the goodness of dates, seeds, coconut and cacao.
Seriously easy, seriously healthy, seriously good.

*As always, if you feel you need a little extra sweetener in the mix, you can add 1 tbsp rice malt syrup or a dash of raw honey to the mix, but I think they are sweet enough without.
