Make Bircher Muesli overnight

This is a delicious, healthy way to start the day, and by making it the night before it is a real time-saver on those busy mornings. Simply throw all the wholefood ingredients together in a glass bowl the night before, then serve up in individual portions the next morning, top with a dollop of coconut yoghurt and fresh seasonal fruit, and voila, a delicious healthy, wholefood breakfast to keep you well energised throughout the day.

Overnight Bircher Muesli

Gluten Free, Dairy Free, Nut Free

Serves 3-4

Ingredients

2 cups of organic rolled oats
2 tbsp chia seeds

2 tbsp of shredded or desiccated coconut
1-2 tsp cinnamon (to stabilise blood sugar levels)
2 small apples (skinned and grated)
1.5 cups of coconut water
1 cup of coconut yoghurt

Method

Throw all the ingredients in a large glass dish and mix until well combined.
Leave in the fridge to soak overnight.
Top with some blueberries or a handful of goji berries for a little extra antioxidant boost and another dollop of yoghurt in the morning. Delish.
