Coledale Public School’s Swiss Chard Mini Quiches

The children at Coledale Public School are busy in their garden this spring – running around with watering cans, carrying armfuls of mulch for veggie beds and rounding up the chickens. In November, the community will be invited inside to see the fruits of their labour as part of the second Illawarra Edible Garden Trail. Read that story here and enjoy their recipe below.

Swiss Chard Mini Quiches

Makes 2

Ingredients

  • 6 eggs
  • 1 bunch swiss chard or spinach
  • 1 cup shredded cheddar cheese
  • 3 diced spring onions
  • 1 clove garlic, crushed
  • 1 tablespoon oil
  • 1/2 teaspoon salt
  • Dash of nutmeg
  • Mixed herbs

Preparation

  1. Wash the chard and discard the stems.
  2. Heat 1 tablespoon oil with the crushed garlic.
  3. Chop or tear the swiss chard into small pieces and cook it for about a minute, until wilted.
  4. Cut mixed herbs. Dice spring onions.
  5. Beat the eggs in a bowl and add the cheese, salt, diced spring onions, mixed herbs and the wilted chard.
  6. Grease a pie pan or spray with a non-stick baking spray. You can also use muffin tins prepared in the same way.
  7. Pour the mixture into the pan.
  8. Sprinkle with nutmeg.     
  9. Bake at 400F for about 30 minutes.

* If cooking in muffin tins, it may cook faster, so check them at 15 minutes.
